Century eggs 🥚
I really love Chinese “Century eggs”, I always order them when I go to Din Tai Fung. There’s a legend that these eggs have a bad smell — this is not true. Regular boiled eggs often smell much worse. Plus, these “century” eggs are doused with vinegar and sprinkled with ginger — a very fresh smell. They taste about like regular boiled eggs (not overcooked), but have a softer and more “fun” texture.
Despite the name, they are not a century old. Depending on the method, pidan are cured in an alkaline mixture for several weeks or longer.
In short, when you have the opportunity, you should definitely try them.
